Red Velvet with Vanilla Bean Buttercream, 18”x12” Detailed to look like a Coach men’s briefcase. Vanilla and chocolate fondant, Airbrushed logo, and modeling chocolate techniques were use in this cake as well as stitching painted gold fondant in all the closures. Very clean and realistic!

My friends and clients Tim & Michael started a tradition 19 years ago which they called “The Jannual”. It is a party in January, after the holiday season, in which they ask their guests to bring a bottle of what they want to drink. They provide all the food and their apartment. The party has grown so much that this year’s guest list is over 60 people. This is the cake i made for their party resembling a bottle of Moet & Chandon.
This cake was inspired by a Louboutin shoe and shoebox. The shoe is handcrafted out of sugar paste. The board is cover with fondant and hand painted to look like a hardwood floor.

This cake is carved to look like a flowerpot. The relief detail on the flowerpot is molded out of fondant. The dirt is made out of delicious chocolate sable cookies. The Red and Watermelon Anthuriums are handcrafted out of sugar paste. The board is a mosaic made out of fondant grouted with royal icing. The small garden shovel is also made out of sugar paste.
A client asked me for a cake for an employee who was moving from NYC to New Orleans. He left the design to me. I made a Topsy Turvy 9” square with a hand-painted Mardi Gras sugar mask and pink sugar-paste Magnolias, the state flower of Louisiana. Fondant beads in 3 sizes plus Fleur de Lis appliques complete the design all in the colors of Mardi Gras and the New Orleans flag. It was a big hit!
My friend Michael asked me to make a cake for his parents , Mario & Carmelin 50th Wedding Anniversary. All he told me was that his father likes golf and his mom likes to garden flowers. I designed this for him and he was very pleased. A 9”x9”x3” square vanilla with a passion fruit ganache and passion fruit buttercream, and a 6” round topsy chocolate cake with mocha buttercream. Many techniques were used in this cake.
